Apple Cake

I'm in the midst of baking an apple cake, which means no picture to accompany this recipe.Sorry about that. It is raining outside and I felt this day needed something cozy and filled with cinnamon. So far, so good because the apple cake smells amazing.

Ingredients
  • 1 1/4 cups white sugar (I used less, about 3/4 of a cup because the apples were so sweet)
  • 2 cups all-purpose flour (used a mixture of whole wheat and white)
  • 2 teaspoons ground cinnamon (added nutmeg and cardamon as well)
  • 2 teaspoons baking soda
  • 2 eggs
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts (I only used a small handful, but added dried cranberries)
  • 5 1/2 cups chopped apples (didn't measure this amount out, just chopped up two huge and one tiny apple)

Directions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. In a medium bowl, stir together the sugar, flour, cinnamon, and baking soda. Add the eggs, oil and vanilla, mix well. Add the nuts and apple, mix until all of the apples are evenly coated. Pour into a 9x9 inch pan.
  3. Bake for 45 to 50 minutes in the preheated oven. Serve warm or cool.
